Italian Chicken Nuggets

Serves: 4-6

4....................... ......Chicken breasts (boneless, skinless)

¼ cup...................... Olive oil

1 cup....................... Vinny's BEST KEPT SECRET Fermented Garlic Marinade

1 tbsp...................... Black pepper (fresh cracked)

1 tsp........................ Salt

1 cup....................... Parmesan cheese

3 tbsp.......................Basil (dried)

Cut chicken breasts into bite size pieces.

Combine oil, wine, salt and pepper to create marinade. Pour marinade over chicken pieces and store overnight in refrigerator.

In a deep-dish frying pan, fry chicken until thoroughly cooked. Remove from pan.

Combine Parmesan and parsley. Roll chicken in Parmesan and basil mixture. Serve.

Serve as an appetizer or in a salad.

 

 

 

 

Roasted Red Pepper & Mandarin Orange Coulis

Makes 2 cups

5 ......................  Roasted Red Peppers

2 cloves ...........  Garlic

2 tbsp................ Vinny's BEST KEPT SECRET Fermented Garlic Marinade

1/3 cup.............  Balsamic Vinegar

1/3 cup.............  Olive Oil

½ can ..............  Mandarin Oranges

To taste............  Salt

To taste.............Chili Powder

                           

Blend everything together in a food processor. Strain coulis through cheesecloth and place strained liquid into food storage container. Store in Refrigerator until needed.

Use as a great dipping sauce.
